Southern Style Brunch

With that being said let's dive into this delicious and beautiful brunch I put together one Sunday for my family. 
The two biscuit options I used for my little biscuit board were perfect for various taste palettes. A little savory with cheese and chive option; and then sweet with the cinnamon biscuits. I also, whipped up my super easy and homemade strawberry jam, just in case. The thing that I love about these biscuits is that the only thing I had to do was pop them into the oven. As much as I love making biscuits sometimes the easy route is best, if you're low on time. These are just as delicious- Trust mešŸ˜‰
 



Now, let's talk about the Quiche- The best quiche I've had in a very long time. It was delivered in a cute box and all I had to do was put it into the oven. My family loved it and that made me feel so good to know, that everything prepared was tasty and up to our high standards. Like I mentioned previously, I chose the spinach and mushroom quiche because I love that combo. The crust was perfect of the whole entire quiche was full of flavor. You will not be disappointed. The Southern Baked pie has some delicious pies that I have been eyeing too. They are based in Georgia and offer a variety of baked goods in different locations, as well as shipping to us who aren't lucky enough to live close by. 

You're probably wondering what I did with the Pimento cheese- well, I made the best pimento cheese grits ever! It is literally my new favorite dish and I'll definitely be making it again. It is not only delicious but very filling. I love taking an already delicious food and creating something else super delicious with it. My mom literally said "mmmm, wow, this is good Ebonee!" I'll be sure to link this recipes that I used. The Pimento cheese spread from CHLB is also so good on the biscuits, So the remainder was there for that option as well.

Cauliflower appetizer

Hi Friends! Here's yet another delicious recipe that I wanted to share with you.

Preheat oven on 375 degrees

Ingredients:
One head of cauliflower cut into bite size pieces. 
Toss in oil of your preference or melted butter. I tossed mine in avocado oil.
season with salt and pepper
Grate cheese- Parmesan cheese.


Lay out cauliflower on a baking pan and roast until a little soft and then take out of oven and spread the parmesan over the cauliflower and put back in the oven for another 10 minutes.
Take out of the oven and enjoy once it's warm enough to eat!

Kombucha Cha Cha Cha

 Happy Sunday Friends! For those of you who are not interested in the Super Bowl 😬 yep, I admit it! I am not a football fan, it’s just not my thing. Tennis, that’s a whole different topic for another time- I love tennis. 

Anyways, I do love some good food and tasty drinks that come with these kinds of festivities! Speaking of, let’s talk delicious drinks that are not only delicious, but good for the gut! That’s kombucha- Big Easy  kombucha brand recently reached out for me to try their new pineapple  Tepache which is so delicious by the way. It’s a sparkling probiotic/prebiotic drink made from fermented pineapple. Number one, I love supporting a company that makes a great product and I truly love. And number two you totally should try their Kombucha and Tepache. I have tried their strawberry kombucha a while ago and if you know me really well, you know that I absolutely love strawberry. Big Easy also have the Immunity shots as well. 




I personally drink a lot of kombucha because I have some stomach sensitivities and it really relaxes my stomach.

Healthy & Delicious Meal Ideas


Hi Friends! Thank you so much for stopping by, I wanted to share a couple more meal ideas. If you are new to reading my blog; then you will find out that I like to cook and eat fairly healthy. Don't get me wrong, I love me some  Chickfila. But I'll say that I eat pretty healthy 75% of the time and that is usually from what I cook at home. I also love shopping local at the Farmer's Market and finding locally grown produce. I can get the benefits of local foods and support local farmers.



One of my favorite lunches lately is this delicious salad. The ingredients include:
Locs 
Half of an avocado
Leafy Greens/Arugula
Red Onion
Manzanilla Olives
Chick Peas
and my home made salad dressing.
Salad dressing ingredients: one serving
Half of a lemon
Three tablespoons of apple cider vinegar
 Two table spoons of Olive oil
Salt/Pepper
 


This second recipe is something that I threw together and it was so yummy.
Its a breakfast casserole or you could eat it anytime if you'd like.
Ingredients:
Seven eggs 
A few handfuls of spinach for those extra vitamins from greens
Diced bell pepper
Diced Red Onion or Yellow- I used red because that's what I had on hand
Two links of Boar's Head Honey crisp fully cooked Chicken Sausage diced
Diced sweet potato- I recommend giving the sweet potato a little saute before adding to the casserole for baking.
Once you've added all of the ingredients add to preheated oven and bake until egg is thoroughly cooked.
Feel free to add salt and pepper to your mixture.

Sunday Meal prep Callie’s Hot Little Biscuit Cheddar Crisps

Happy Sunday evening friends. Today was a semi-productive day, meaning I didn’t get any house chores done. But I did manage to get some meal prep done and make a delicious recipe. I’ll be home in Florida most of this week and also working from home on some schedules. So I wanted to make a healthier and delicious meal for at least two days of this week. When I travel, obviously I eat out and sometimes it’s a lot of quick unhealthy foods. So when I’m home I like to reset and make something healthy, delicious, and somewhat quick. So as you may know, Callie’s hot little biscuit is my favorite biscuit company and I have two packages of their biscuit mix in my pantry. I was thrilled when they sent me a package of their frozen biscuits as well as their cheese crisps. Their cheese crisps to me are a combination of a cheez-it and a crouton with a dash of spice due to the pepper. I wanted to incorporate the cheese crisps into my meal this week so I put my creative thinking cap on and decided on making baked breaded chicken thighs using the cheese crisps and some bread crumbs mixed together. So I whipped out my cookware and went to cooking and MY OH MY!!!!! It turned out better than I thought. I’ll humbly give myself a 10 out of 10šŸ‘šŸ¾ I highly suggest making this for yourself. I included homemade Baked seasoned sweet potato fries and carrots and broccoli for all of the healthy vitamins.

Here is the recipe. Note* I'm a single person so this recipe can be adjusted to your particular needs.
4 chicken thighs - I used the one with the skin on.
1/2 of a cup of bread crumbs- you can use seasoned. I used unseasoned because that's what I had in my pantry.
Olive oil
Salt and Pepper for your chicken if you don't have seasoned bread crumbs.
Heat your oven to 400 degrees Fahrenheit. Drizzle olive oil over chicken and season with salt and pepper. 
Mix the bread crumbs and Cheese crisps together and spread over chicken and then place in oven until it's thoroughly cooked. And then through together some sides and enjoy your meal.

Callie's Hot Little Biscuit can be found in grocery stores like Costco, Fresh Market, and online also. They actually started as an online company shipping their delicious family recipe biscuits. So if you don't have a Fresh Market or a Costco near you, sending it via mail is a great option. I received my biscuits via mail and it was packaged nicely.

Delicious, Simple and Healthy recipe

Hi Friends! I love a healthy and delicious dish, I also love when it’s simple. Today I’m sharing a side dish that can be accompanied with your main course. I actually got this recipe from someone but I just added a little extra flair with the seasonings. So first things first, sweet potatoes are one of the most healthy foods you can eat and add an apple to the mix it’s equally as delicious and healthy.
Here are the ingredients you’ll need:

1 or 2 Sweet potatoes (depends on how many your serving) one sweet potato gave me 2 servings
An apple
2 in a half tablespoons of butter
Nutmeg* optional

Heat your pan with the butter and add your cut up sweet potatoes and apples. Let them cook on low/medium heat until soft. Approximately 30 minutes give or take.

Add nutmeg if you’d like or simply serve as is!
It’s one of my favorites and it takes so delicious. Let me know if you try it.

Crustless Quiche recipe


So I decided late last night to make a quiche for lunch today. I had some veggies in from the garden that I wanted to use and some leftover items in the fridge that I didn’t want to waste. No wasting food šŸ™…šŸ¾ā€ā™€ļø  It turned out delicious.
Here are the ingredients that I used:
Two eggs
Boar’s Head Feta cheese- because it’s the best.
Kale
Tomatoes from the garden
Chives
 1/2 cup All purpose flour
 1/2 tsp of Baking powder
1 cup of Milk
1/3 cup of Buttermilk- for extra flavor
garlic powder
You can add in salt and pepper if you'd like but I added it afterwards because I heard adding salt to eggs before cooking makes them dry. But I didn't have to add much salt because I had a lot of flavor with my ingredients.
I set my oven to 400F added olive oil to my favorite stoneware dish, linked here and here's the whole set including the quiche stoneware as well. I mixed all of the ingredients together and cooked for about 30 minutes. These appetizer plates are my favorites and SUPER inexpensive. I love the classic white combined with a modern square shape.

What I've baked lately



Hi Friends, thanks for stopping by. I was inspired by another Instagram account to do some baking. I've been wanting to make buttermilk biscuit for a while now but just didn't get around to it. Well, since we all are home now quarantining or working from home or just staying home. I thought I'd pull out my baking supplies and get to baking. One key ingredient that I needed was buttermilk, welllll...... I thought that I had some but it really was a different dairy product that I couldn't use. So I had to get creative and make my own Buttermilk substitute and it was super easy.
I wanted to share it with you just in case you are ever in a baking quandary. LOL
Ingredients:
one cup of milk
one small fresh lemon or white vinegar
In a bowl whisk together two tablespoons of the lemon OR 
whisk in two tablespoons of vinegar.
And that's it! you're all set. Super easy right?

Weekend Favorites: Homemade Cashew Milk Recipe

So as you all know I have been transitioning into a dairy-free life - although I’ll never be completely dairy-free. I just can’t do it. However, I’m making an effort to be at least 75% dairy-free. So, therefore I wanted to try my hand out in making homemade cashew milk. I have to say it’s completely easy and so delicious! I started by soaking my cashews in water for a minimum of 4 hours and rinsed them thoroughly. Here are the simple breakdown and ingredients.

I did a ratio of 2 cups of water to 1 cup of soaked and rinsed cashews.
Vanilla extract
Honey
Dates

The last 3 ingredients are for flavor and sweetening. I added no certain amount but I did do a taste test to make sure it was sweet enough for me- I like it sweet because I’m adding this to my cold brew iced coffee.
I tried it and it’s so delicious! Perfect for us who are dairy-free. It doesn’t mean we have to compromise on flavor.

*NOTE- If you see any small cashew pieces you can strain them out :-)

My Favorite Healthy Snacks while Traveling

Hi Friends! Thank you so much for stopping by. I'll be traveling again for work this weekend and I'm packing my favorite foods. Some I have been eating for a while; some I just discovered and wanted to share with you. First off, I drink a lot of water, so that was a must. And I love Angie's Boom Chicka Pop popcorn they have a variety of flavors including some holiday flavors that are delicious. This one is one of my favorite flavors. This beet orange juice is also delicious made with Florida oranges which made me an instant fan. I love the regular orange juice as well as the strawberry lemonade. Delish!

I also tried out a new breakfast item. This strawberry overnight oats are my new favorite for on the go travel days and it tastes yummy too. When I'm home I normally eat a nice bowl of greek yogurt for protein, granola, honey, and fruit. This breakfast item actually has greek yogurt so it was perfect. I have to have a lot of protein in the morning. Also, some of my favorite snacks are nuts. They are a good source of protein. 

All of the non-perishable snacks I put in my new Lilly Palm Beach zip-up tote so that everything is nice and safe. I love this print. I picked it up last week and the Lilly team said that it's not even on the website yet, so its very possible I'm the only person with this bag. LOL. They have it in a different print. The print name is "Postcards from Positano." I'll link the one on the website here for you to check out. I love the zipper because I can secure my items and they won't fall out. Last but not least my favorite fall drink at the moment is apple cider latte. Its the perfect on the road drink. It gives me all of the Happy Vibes.

A Day in New Smyrna Beach

Hi Friends! So I started my vacation off the right way- at the Beach! While the rest of the world may be getting cooler fall weather. It's still flaming hot here in my home state. Although I've been trying to dress in more of my darker Lilly clothing. If you've been wearing Lilly for a while you might remember this print and maxi. I wore it today at one of my favorite beaches-New Smyrna. I am not kidding when I say that everyone loved this dress and made so many comments about it. Its one of my favorites and I bought it a couple seasons back during the APS. I had a great and relaxing day eating healthy foods, walking along the beach, taking lots of pictures on my camera, and going to the cutest acai/smoothie shop ever. Thank you so much for stopping by. Oh, and btw this blog post marks my 100th blogpost on my blog!!!! wooohoo!

Semi Healthy Meal Prep Idea

Hi Friends! So as promised, here's a semi-healthy meal idea for the week. The reason I say semi-healthy, is although the dressing I use is organic; it still has a decent amount of sodium. You can adjust the portions according to how many you're serving. But all you'll need is
1. Organic Pasta
2. Annie's goddess dressing ( Its a blend of lemon and garlic)
3. asparagus
4.shrimp or chicken ( I love seafood so I went with shrimp)
Cook the pasta according to the instructions, cook the shrimp until pink and the asparagus until tender. I steamed my shrimp and asparagus in the same pot to cut down on time ( i don't have very much of it).  Mix all of the ingredients together and I recommend serving it chilled. The dressing tastes better in my opinion cold. You can also top this recipe with feta cheese for a complete greek style flavor. Let me know if you try this recipe.  I have eaten it for lunch and it's quite scrumptious.
